Balanced Living Recipe #1 - Summertime Soup


If you are like us, We L-O-V-E Summer! ☀️ Not only because of the change in weather but because of all the amazing fresh produce that comes into season. 😁 There's nothing better than homemade, fresh food.


Here's one of our favorite "Summertime Soup" recipes, that we are excited to share in our 1st Balanced Living Recipe post! 🍡

Ingredients:
1 medium onion (diced)
3 tbsp butter
1/4 c flour
2 cups chicken (or veggie) broth
4 c 2% milk
1 c mushrooms (chopped)
1 medium zucchini (grated)
2 medium carrots (grated)
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 c rice

Directions:
1. Cook rice according to directions. Set aside.
2. In a large soup pot, melt butter. Add grated carrots and diced onions. Saute for 4 min. until carrots and onions are tender.
3. Stir in flour until combined. Cook for 1 min.
4. Add broth, milk, salt & pepper (to taste) and bring to a boil.
4. Reduce heat. Add cooked rice, zucchini, mushrooms, onion powder and garlic powder.
5. Let cook until veggies are tender. Make sure to stir often, so the soup does not scorch.
6. Serve & enjoy!

Servings: 12
